With Thanksgiving right around the corner, we are thinking of creative ways we can serve classic dishes. Our white cheddar mac’N’ cheese stuffed squash is just that. We love this pair together, serving the mac n cheese in the squash not only looks awesome but, tastes awesome mixed together
A great trick we use any time we are cooking butternut squash is to pop it in the microwave for a minute or two, wrapped up in a damp paper towel. Let the squash cool for a little then cut it open, it will go from struggling to cut, to smooth like cutting butter. This also makes it much safer to cut up butternut squash so thats a great bonus, we all like keeping our fingers intact, hahaha. After you cut the top off and hollow out the bottom of the squash, brush it with oil and bake in the oven.
While your squash in in the oven make your mac’N’ cheese. We don’t know about you guys but mac’N’ cheese is a total nostalgic childhood favorite. This is a more adult recipe, but the kids will totally love it and you might even get them to eat some of the squash. Happy cooking everyone.
