The summer time means lots of our favorite fruits are back in season and tasting better than ever. strawberries and watermelon are my personal favorites. So it’s only natural that I am SO EXCITED about this recipe. And there is a reason I love these fruits so much.
My grandmother and I try and see one another as much as we can, but we all know how life can get in the way. She is 90 years old and still going strong, however all the more reason why making an effort to see her as much as possible is very important to me. Now, i’m sure you’re asking, what does this have to do with my love for summer fruits? At the end of each month, my grandmother and I meet at her place in Century City, not to far for me, and upon arrival I am greeted with a decadent spread of fruits and sweets. All my favorites of course because she is wonderful like that. And when May/June rolls around she goes all out in finding the biggest strawberries, and juiciest watermelon to have cleaned and cut when I arrive. Guys, she is 90!! Talk about incredible genes, right? This has been going on for many years now, and it always amazes me how everything taste better when she buys them. It’s a wonder, I know.
But it’s in part because of her that I have a constant craving for watermelon. The other part comes from my father. To keep me busy when I was younger, he would quarter a huge watermelon and give me one of those quarters to eat. Que a visual where a 9 year self stuffing my tiny face in a huge slice of watermelon. Definitely one of my favorite childhood memories, and it’s no wonder I am food blogger now. Alright, now back to the recipe at hand. Sammy and I felt we had to figure out a way to enjoy watermelon in a different way than just stuffing our faces with it. We balled a whole watermelon to make a huge batch of salad, and it made enough to serve roughly 8-10 people. For an added flair to the look of this salad we spiralized 2 cucumbers, however it’s not necessary. We can’t forget about the addition of chopped fresh basil and mint, this step is very important and makes the salad in my opinion. Top it off with some delicious feta and dressing for THE perfect summer salad.
Speaking of the dressing, we have a few recommendations we’d like to make. When prepping dressing from scratch, we like to use the Prepara Dressing Mixer as shown in the video above. It truly works wonders. And, we used a White Balsamic with Pear Vinegar by Pastamore that is a bit sweeter than your average white vinegar. It compliments the sweetness in this fruit based salad so well.
