It’s officially the first day of summer!! WOO HOO! And what’s a first day of summer blog post without a delicious popsicle recipe, am I right?! It feels like we have been moving at a snail’s pace to get to this day, and now we can finally (or rather continue to) bombard everyone with our best summer eats. Are you ready for it, cause we’ve got a killer line up for you all.
On Friday we have we’ll be sharing a recipe for enchilada chicken roll ups, and they are summed up in one word. YUM! Just like these strawberry milkshake popsicles, they are all I want to eat on this scorching hot day. They are so easy to devour in seconds, and did we mention they are vegan? Oh yah, these are a real winner. Anyone and everyone can cool off with one of these this summer, and they are so easy to make. Best if you make them the night before, they needs quite a bit of time to fully freeze. And let sit out for 5-10 minutes before trying to extract from the mold. Follow the recipe, and these steps and you will have perfect popsicles every time.
One of the benefits to homemaking popsicles, is of course they are customizable, but they are cost efficient as well. It’s DIY recipes like this that are healthy for you and your bank account. I don’t know anyone that would complain about that. And let’s be honest, our financial situation is something that is always in the back of our minds. Properly planning out your meals is key. For example, if there is a certain ingredient on sale at the market, i’ll buy it in bulk and plan meals around that ingredient. Or making meals with what’s in your house. You’d be surprised what you can come up with. It’s exactly what we did with these popsicles. We had all the ingredients ready to go, and they became a blog post and a refreshing treat. That to us is a total win!

popsicles

- 2 cups coconut silk
- 2 tbs chia seed
- 2 tbs maple syrup
- 1 cup fresh strawberries
- 2 cups frozen strawberries
- 1 cup coconut soy ice cream
Ingredients

- Sprinkle chia seed in bottom of each mold
- In a blender, combine coconut silk, syrup, fresh & frozen strawberries, ice cream, and blend until fully combined.
- Fill mold with “shake”
- Using a knife, gently mix in the chia seeds at the bottom
- Freeze for at least 5 hours or until completely frozen.
Let popsicle's sit out for 5-10 minutes before removing from mold.
