Happy day after Thanksgiving friends! Hope everyone had a great day filled with family, and lots of delicious food. Speaking of lots of food, I am sure most of you have enough leftovers to last days. Which is exactly how you’re going to make this Turkey Cranberry Quesadilla which is featured in our post today.
It’s not often we prepare a meal as big as a Thanksgiving dinner. However in my family growing up, portion control was non existent. My mom used to cook dinner for twelve, but it was just for my brother, myself, and for her. So we grew accustomed to eating the same meals for a few days. When it was her spaghetti, I was all about that, but it does get hard eating the same thing over and over again.
Thus bringing us to the reason for this post today. Wasting food is never a good option. Getting creative with what you do with those leftovers is a better alternative option. Who would have thought that a thanksgiving quesadilla would be this delicious.
As you see pictured, we layered on shredded mild cheddar cheese, shredded leftover turkey, some cranberry relish, and then more cheese on top. It melted together perfectly, and it didn’t taste like I was eating the same meal from the day before.

- 2 flour tortillas
- 1 cup mild cheddar cheese or swiss cheese
- 1/2 cup shredded leftover turkey
- 1/4 cup cranberry sauce
- 1 tbs butter
Ingredients

- Sprinkle half of your grated mild cheddar or Swiss cheese all over one side of a tortilla.
- Add shredded turkey to it.
- Spread cranberry sauce over those layers.
- Sprinkle remaining cheese over the cranberry sauce layer.
- Put the other tortilla on top of the whole thing. Melt butter in a skillet over medium heat. As soon as the butter is melted add the quesadilla. Cover skillet with a lid because it helps warm the tortilla. Let fry until golden brown. Flip, cover with a lid, and let the other side get brown. It should only take 1-2 minutes.
- Remove quesadilla to a cutting board. Allow to rest for a minute or two. Cut into wedges.
- Serve warm, and enjoy!
