What is just 3 ingredients, star shaped, and is a great gift to give people this Holiday season? These three Ingredient Shortbread Cookies of course. Did the 3 ingredient bit give it away? Happy Holidays everyone. Tonight we celebrate the 8th and final night of Hanukkah, and in 4 days it’ll be Christmas Eve! Can you believe it? This month flew by, and I still have about 30 presents to wrap EEKKK! Thankfully I plan on giving these delicious shortbread cookies to a few people on my list, which takes little effort to bake and put in a pretty package.
Let’s break this down, because you will see how easy this really is. Start with your three ingredients which is butter, light brown sugar, and flour. You don’t even have to wait for your butter to softened because it goes in cold and cubed. I am not going to lie, I always forget that step. Add your ingredients in a mixer to combine or until the batter becomes light and fluffy (this will take several minutes). Knead the dough for about 5 minutes or until the consistency becomes like play dough, not sticky.
Optional to add sprinkles, but now would be the time to do it. If adding sprinkles, knead dough for an extra minute or two to combine. Chill dough for at least 30 minutes so it becomes firm enough to roll out dough, and cut into your desires shape. Place cookies on a silicon mat or parchment paper, and bake for 15-20 minutes. And that’s it! Not bad right? And the end result is a seriously delicious, buttery flaky cookie that maybe lasted two days in my house. I’d like to chalk it up to the Holiday spirit that made us devour these tasty treats, but that’s about as long as cookies ever last in my house.

- 2 cups butter, cold and cut into pieces
- 1 cup packed light brown sugar
- 4 1/2 cups all purpose flour
- sprinkles, optional
Ingredients

- Preheat oven to 325F, with rack in a middle position. Line baking sheet with parchment paper or a silicone mat; set aside.
- In the bowl of a stand mixer, add butter and brown sugar. Using paddle attachment on medium-high speed, mix until fluffy and light, This will take several minutes. Add 3½ cups of the flour and mix on medium-low speed until combined.
- On a large board, sprinkle ½ cup flour. Knead dough by hand for 5 minutes, adding as much of the remaining ½ cup flour as needed to make a soft dough. The dough should end up similar to play-dough, not sticky. Work in desired amount sprinkles , optional. (You may not end up using all the flour, depending on how your dough feels.)
- Divide dough into thirds, wrap so that’s it’s airtight, and chill for at least 30 minutes or until firm enough to roll and cut shapes. Roll one-third of the dough out to about ½ inch thickness (lightly flour board if needed.) Use cookie cutter for shapes. Place each cookie 2 inches apart on baking sheet. Poke cookies with fork to design if not using sprinkles.
- Bake 15-20 minutes, or until edges are golden brown. If your shapes are smaller, bake less time. Bake longer for bigger shapes. Repeat with the remaining dough, working in batches so dough stays chilled and workable.
- Cool completely before serving. Cookies keep well when sealed at room temp.
Extra dough can be frozen for up to 2 months if wrapped airtight.
