Who doesn’t love a good rice crispy treat? We do, and with St. Patrick’s Day right around the corner, we needed a little help getting in the mood. And I think we can all agree that nothing screams St. Patrick’s Day then turning these tasty treats green and adding lucky charms marshmallows. Well if we weren’t in the mood before, we definitely are now. It’s always great to find a fun project to get the whole family involved, and we think it’s why these are so popular every year. Anyone can participate and put their own spin on it.
Its as easy as melting butter, gradually adding your marshmallows until melted, and rice krispie cereal; with a few steps in between but none the less very easy. Avoid burning your marshmallows by cooking them on low heat until fully melted. We think the hardest part was separating the lucky charms from the marshmallow’s because their to fun not to eat. That and shaping these sticky devils was a fun task. But we figured out a great way. We used a glass pyrex pan to dump out our rice crispy mixture, and then sprayed a piece of parchment paper with a non stick spray and used that to press them into to pyrex pan. Once you’ve finished shaping them, very slowly peel off the parchment paper. As a result, you have perfectly shaped rice crispy treats! - 1/4 cup butter
- 4 cups soft marshmallows
- 5 cups rice crispy cereal
- 1/2 tsp vanilla extract
- green food coloring, optional
- 3/4 cups lucky charms marshmallows
Ingredients

- Melt butter over low heat until completely melted. Gradually add marshmallows and stir often to avoid burning them.
- When marshmallow/butter mixture is completely melted, add 1/2 teaspoon of vanilla and your green food coloring and mix well. Remove from heat and stir in your Rice Krispie cereal.
- Once mixture is mostly combined, stir in the Lucky Charm’s marshmallows. My kids and I picked them out of the Lucky Charms. If possible, store in an air tight container and they will stay softer longer! A ziplock bag works great!
