It’s Monday, and after a long Holiday weekend I am feeling it. It was extra hard to get out of bed this morning, and extra hard to get back into work mode. But you gotta do what you gotta do, right? So let’s get to it. What’s really getting me through today is my excitement to share this delicious Soft-Centered Spoonbread recipe with you all.
I know Thanksgiving is over, but I don’t think I took the time to mention what I am grateful for. It doesn’t matter how busy life gets, never forget to slow down and appreciate what’s important in life. Perspective is so important, especially this time of year.
So what am I most grateful for? My wonderful family for starters, my fun loving husband, and the fact that I get to wake up and do what I love everyday. The blog brings me so much fulfillment, I’ve always loved food, photography is my passion, and well the writing thing is really growing on me.
Now that i’ve gotten some perspective, we can finally get to the good stuff. The spoon bread recipe that is. It’s not your typical bread recipe, it’s better. The moist and fluffy center of this bread is everything. And In typical bread fashion has a perfect crusty exterior to go along with it, almost exactly like a souffle with a similar flavor cornbread. All thanks to the “Joy of Cooking” cookbook for introducing this timeless recipe to us. I will definitely be making this again for the Holidays instead of serving bread rolls or even having it for breakfast the next day, just saying.
