When it comes to nachos, the struggle is real. I mean, who doesn’t love a good nacho recipe, you know? There are a million different variation you can create, there are never too many toppings you can add, and they are great for serving and sharing with your favorite people. And what better time to break out this SoCal Blue Chip Nachos recipe then during this upcoming Memorial Day weekend.
Memorial Day is one of my favorite Holidays as it is remembrance day for all those who served and lost their lives keeping our country safe. The way we show our appreciation is taking time to enjoy what they fought so hard to protect and that’s our freedom. In my free time this weekend i’ll be spending it with those I love most, my family.
My family gatherings are quite simple really, and I wouldn’t have it any other way. All we need is food, each other, and the beautiful SoCal weather. Thus bringing us back to the SoCal Blue Chip Nachos recipes. As you can see pictured above, we have each layer pictured in a collage just to give you an idea how layered this dish really is.
It starts with a layer of blue corn chips, then a layer of shredded cheese, then a meat layer of your choice, both black and pinto beans, a layer of corn, then pico de gallo, more cheese, and finally some dollops of guacamole and sour cream to finish it off.
Throw all that in the oven, and BOOM! SoCal Blue Chip Nachos ready to enjoy. I mean if that cheese pull doesn’t get your mouth watering, I don’t know what will. - 2 bag's blue tortilla chips,
- 1 lb ground beef
- 1 pack taco seasoning
- 1 can pinto beans
- 1 can black beans
- 1 can corn
- 1 cup pico de gallo
- 2 cups shredded mexican cheese
- 1/2 cup Guacamole
- 1/2 cup Sour Cream
- fresh Cilantro

- Heat oven to 400F. Line 12 inch pan with foil, spray with cooking spray. Spread half of the chips evenly on the pan.
- In a skillet cook the beef over medium heat, until all the meat is browned. Stir in taco seasoning and mix cooking for another 2-3 minutes.
- Arrange half of the beef on the chips, then a layer of pinto beans, black beans, corn, pico de gallo, then cheese. Add the rest of the chips and layer all ingredients for a second time. ending with a little extra cheese.
- Bake for 12-15 minutes. Then add fresh toppings like guacamole, sour cream, and fresh cilantro.
