The best kind of weeknight meal is a slow cooker meal that’s ready for you when you get home from a long day. I just discovered that Campbell’s has come out with a line of slow cooker sauces, and this Slow Cooker Sweet Korean BBQ is one of the many flavors they have available. It doesn’t get much tastier and easier than this friends, but we’ll talk more about that in a bit.
Now, I realize there isn’t anything fancy or homemade about these Campbell sauce packets, but not everyone has the time to cook all their meals from scratch. Even as a food blogger, it’s a god send when I find easy to make recipes like this one. Since it’s Monday, we thought what better time to share a slow cooker recipe than when you’re fighting those Monday blues.
It’s true that Monday’s are like a never ending struggle to fight a bad case of the lazies. The struggle is real, and having dinner ready for you when you come home always feels good. Let’s break this down, and you can tell me if this isn’t the easiest meal prep ever.
Start by adding a little salt and pepper to your boneless beef chuck roast, place the meat in your slow cooker, add your packet of campbell’s sweet korean bbq sauce (on a side note, I did allow the beef to marinate in the sauce before adding it to the slow cooker, but this is totally optional), and cook on high for 4-5 hours or on low for 7-8 hours. Go to work, and your house smells like a 5-star restaurant when you get home. Literally my favorite part about this was how incredible my house smelled. I served the shredded beef on top of jasmine rice which took me all of 15 minutes to prepare, and dinner was on my table.
At one point I was like this is too good to be true, and I am missing some crucial ingredient. I ended up adding sesame seeds and chopped green onion, however that’s totally optional. Just the rice and beef together will get anyone’s taste buds excited. So easiest meal prep ever or what?! - 2-3 lb beef chuck roast
- 1 packet Campbell’s slow cooker sweet korean BBQ sauce
- 2 cups jasmine rice prepared according to package
- sesame seeds
- green onion, thinly sliced
Ingredients

- In a bowl, season your chuck roast with salt and pepper
- Add Campbell’s sauce packet and marinate for 30-45 minutes (optional step)
- Place chuck roast in a slow cooker (if you didn’t marinate the chuck roast, now would be the time to add your sauce)
- Cook on high for 4-5 hours or on low for 7-8 hours
- 20 minutes before your roast is done, prep your jasmine rice, and serve shredded chuck roast on top of your cooked rice. Serve immediately and enjoy!
Note: Top with green onion and sesame seeds (optional, but highly recommended)
