We are continuing with our breakfast theme today with an american style sheet pan breakfast meal. As the most important meal of the day, and with little time to cook and clean first thing, this recipe is truly a god send. I got to be honest here, I much prefer cooking in the evening after a long day, because at least I have the time to spend making something delicious, and then clean up my kitchen afterwards. In the mornings, I feel so limited on time and distracted with thoughts on the rest of my day. Does anyone else feel this way? I know it’s because I am a bit of a control freak, and before my day even starts I am planning for what hasn’t happened. Crazy right?! It’s a constant struggle that I am always working through, but in the meantime maybe I should stick to a sheet pan meal diet. Haha not a thing, but maybe it should be! I have yet to make a sheet pan recipe that I haven’t liked, this in particular is a favorite.
I am a total sucker for hash browns, super crispy of course, which is going to be your first layer. Along with a mix of spices, butter, olive oil, and a sprinkle of cheese. This is going to bake first until your hash browns are starting to brown along the edges. Next step is creating little wells for the eggs, and adding little slices of bacon throughout. Sprinkle eggs with some more cheese and continue to bake until the egg whites set, and serve immediately! I’d say that’s pretty manageable right? The one tip I’d like to offer up is those eggs cook rather quickly, best to keep an eye on them as them so you don’t they don’t get overcooked.
