Zucchini Parmesan Crisps

Ingredients
  • 1/2cup vegetable oil
  • 1cup panko breadcrumbs
  • 1cup grated parmesan cheese
  • 2 zucchinisthinly sliced to quarter-inch thick rounds
  • 1/2cup all purpose flour
  • 2 large eggs, beaten in a bowl
Instructions
  1. Thinly, and evenly cover the zucchini rounds with flour.
  2. Dip the floured zucchini rounds in the beaten egg.
  3. Quickly transfer the zucchini rounds to the Panko breadcrumbs and Parmesan cheese mixture. This step is great because you can add as much or as little breadcrumbs and/or cheese as you want.
  4. Add the zucchini rounds to the skillet, you should cook them in batches of 5 to 6 at a time and for about a minute on either side or until golden and crispy.
  5. Once finished, transfer the zucchini rounds to a paper towel lined plate and serve immediately.
