Watermelon Feta Salad
It doesn’t get more refreshing than this salad filled with watermelon, cucumber noodles, and feta topped with a white balsamic and oil dressing.

  • 1 large watermelon, balled with a melon baller
  • 2 cucumbers, spiralized
  • 3tbs mint. finely chopped
  • 4tbs fresh basil, finely chopped
  • 1/2tsp cracked black pepper
  • 1/2tsp salt
  • 6tbs white balsamic vinegar(or white wine vinegar)
  • 2tbs extra virgin oil
  • feta cheese, crumbled
  1. Add all the ingredients to a large mixing bowl and toss until well combined.
  2. Place in the refrigerator and let sit for 10-15 minutes for the flavors to blend.
  3. Divide into serving bowls and garnish with fresh basil leaves.
