Ingredients
  • 1tablespoon olive oil
  • 1 onion,chopped
  • 1 green bell pepperchopped
  • 2cloves garlicchopped
  • 1/2pound ground turkeypreferably dark meat
  • 2tablespoons tomato paste
  • 1teaspoon ground cumin
  • 2teaspoon chili powder
  • 1 15 oz can diced tomatoes
  • 215 oz can kidney beansrinsed
  • kosher salt and black peperto taste
  • 1/4cup Sour Cream
  • cilantro sprigsfor serving
Instructions
  1. Heat the oil in a large saucepan over medium-high heat. Add the onion, bell pepper, and garlic. Cook, stirring occasionally, until tender, 4 to 6 minutes.
  2. Heat the oil in a large saucepan over medium-high heat. Add the onion, bell pepper, and garlic. Cook, stirring occasionally, until tender, 4 to 6 minutes.
  3. Stir in the tomato paste, cumin, and chili pepper. Cook, stirring, for 1 minute.
  4. Add the tomatoes and their juices, beans, ½ cup water, 1 ¼ teaspoons salt, and ¼ teaspoon pepper. Bring to a boil.
  5. Reduce heat and simmer, stirring occasionally, until slightly thickened, 12 to 15 minutes.
  6. Serve the chili with the sour cream and cilantro.
