Tomato Soup with a Grilled Cheese
The best tomato soup recipe comes with a decadent grilled cheese on the side, you will not be able to stop eating this delicious combo.

For Tomato Soup:
  • 1cup canned tomatoes
  • 1 1/2cup fresh cherry tomatoes
  • 1cove crushed garlic
  • 1cup water
  • 2tbs tomato paste
  • 1/4cup sliced onion
  • 1/2cup chopped celery with leaves
  • 2tbs butter
  • 2tbs flour
  • 2cups chicken stock
  • 1/2tsp sugar
  • 1/8tsp paprika
For Grilled Cheese:
  • white bread
  • havarti cheese(we used one with herbs and spices)
  • butter
For Tomato Soup:
  1. In a saucepan, combine tomatoes, onion, garlic, water, chopped celery, and simmer covered for 15 minutes. Strain and reserve the stock. Rinse out saucepan.
  2. In that same saucepan, melt butter, and slowly add flour until blended.
  3. add to saucepan with flour and butter chicken stock, sugar, paprika, tomato paste, tomato stock and season to taste. Cook stirring until smooth and boiling.
  4. Top with fresh basil and/or a spoonful of heavy cream. Swirl it in as pictured for an added styling bonus.
For Grilled Cheese:
  1. Lightly butter the bread on the side without cheese.
  2. Grate cheese (about ½ cup per sandwich)
  3. Melt butter in pan, add bread with cheese on it already, and toast in pan until done.
