Southwestern Chicken Skillet
large chicken breasts
(or cooked rotisserie chicken)
of red pepper, chopped
of green pepper, chopped
chicken or vegetable stock
(enough too cover potatoes in skillet)
(we used store bought)
frontera taco skillet sauce
monterrey jack cheese
Preheat oven to 350 degrees
Cook chicken breast in chicken broth for 10 min on each side; shred chicken then marinate in frontera sauce. ( if you bought cooked chicken, just shred it and marinate it)
Add potatoes to skillet, and cover with chicken broth about ¾ of the way.
Bring to a boil, simmer for 10 min covered, and then uncovered until liquid is gone.
Add beans, corn, cooked and marinated chicken, bell pepper, and top it off with salsa.
Cook in oven for 10 minutes, and serve immediately.
