Ingredients
  • 1/2cup corn
  • 1can black beans
  • 2 large chicken breasts(or cooked rotisserie chicken)
  • 1/2 of red pepper, chopped
  • 1/2 of green pepper, chopped
  • chicken or vegetable stock(enough too cover potatoes in skillet)
  • Salsa(we used store bought)
  • 1packet frontera taco skillet sauce
  • 1/2cup monterrey jack cheese
Toppings
  • Guacamole
  • Sour Cream(optional)
Instructions
  1. Preheat oven to 350 degrees
  2. Cook chicken breast in chicken broth for 10 min on each side; shred chicken then marinate in frontera sauce. ( if you bought cooked chicken, just shred it and marinate it)
  3. Add potatoes to skillet, and cover with chicken broth about ¾ of the way.
  4. Bring to a boil, simmer for 10 min covered, and then uncovered until liquid is gone.
  5. Add beans, corn, cooked and marinated chicken, bell pepper, and top it off with salsa.
  6. Cook in oven for 10 minutes, and serve immediately.
