Soft-Centered Spoonbread
With a moist fluffy center and crusty exterior, this delicious spoonbread is a new favorite and it’s easier to make than most bread recipes.

  • 1/4cup unbleached white all-purpose flour
  • 1tbs sugar
  • 1tsp salt
  • 1tsp baking powder
  • 3/4cup yellow cornmeal
  • 1 beaten egg
  • 1 1/2cup milk
  • 2tbs butter
  1. Preheat 375 degrees.
  2. While your oven is preheating place your cast iron with your butter in it to melt. Leave in oven until batter is ready to go.
  3. Sift together flour, sugar, salt, and baking powder.
  4. Add yellow cornmeal and mix until blended.
  5. Stir in beaten egg, and 1 cup of milk.
  6. Remove cast iron from oven, and add batter. (Do not mix batter once in pan)
  7. Poor in remaining ½ cup milk. (Do not mix at this point either)
  8. Bake for 30 minutes, and check to see if it’s crusting. If not, bake for an additional 5-7 minutes.
  9. Enjoy warm topped with crumbled bacon and maple syrup.
