Shrimp Bisque
This shrimp bisque is a traditional seafood soup with a creamy base, poached chunks of shrimp, and delicious spices made in about 30 minutes.

For Poaching Shrimp:
  • 1 1/2lb shrimp
  • 1 bay leaf
  • 2tbs paprika
  • 1tbs peppercorn
  • 1tbs salt
For the Soup:
  • 6tbs butter
  • 2tbs grated onion
  • 1clove garlic, minced
  • 3cups warm milk
  • 1cup cream
  • 2tbs parsley
  • salt, paprika, and grated nutmeg,to taste
  • top with green onion, and crispy wonton strips,optional
For Poaching Shrimp:
  1. Fill a large saucepan with water, and add bay leaf, paprika, peppercorn, salt and bring to a boil.
  2. Add shrimp to a basket that will sit in the boiling water and cook for 5 minutes or until they turn pink.
  3. Remove basket with shrimp, and immediately transfer to an ice bath. Allow to chill completely.
  4. Peel and devein your shrimp.
  5. Add to a blender, and blend till you get small chunks of shrimp.
For the Soup:
  1. In double boiler (over not in water), butter, minced garlic clove, and grated onion for 5 minutes.
  2. Add the ground shrimp and 3 cups warm milk, stirring in slowly cooking for 2 minutes.
  3. Stir in slowly and heat (not boil) cream.
  4. Add salt, paprika, nutmeg, and parsley and continue to cook until everything is combined and warm.
  5. Serve immediately with chopped green onion, and crispy wonton strips on top, optional.
