  • 2 chicken breasts
  • 1 packet taco seasoning
  • 1 cup Guacamole
  • 1 can pinto beans
  • 1 green pepper
  • 1can sweet corn
  • 1chopped onion,
  • 1 cup pico de gailo
  • 1/2 cup Mexican shredded cheese
  • fresh chopped cilantro (optional)
  1. Rinse quinoa before cooking. Cook quinoa according to the packages instructions.
  2. Marinate chicken in packet of taco seasoning (save a table spoon of seasoning) and a splash of olive oil. Marinate for 10-15 min.
  3. Sear chicken on a high heat, lower the heat after 4-5 min add the chopped pepper, and onion. Sprinkle the reserved table spoon of taco seasoning over the veggies. Cook until chicken and veggies are done.
  4. Warm up the corn and beans in separate pans. Make your guacamole and set aside.
  5. Once the quinoa is done fluff it with a fork and add half a cup to each serving bowl, now start building your burrito bowl. Chop up the chicken, add it to the bowl, along with, sweet corn, veggie mix, pinto beans, pico de gailo, guacamole and top with Mexican shredded cheese and fresh cilantro.
