Quick Creamed Broccoli

  • 2cups blanched broccoli florets
  • 1cup cream of celery soup
  • salt and pepper, to taste
  • 2tbs butter
  • 2-3tbs chicken stock(to lightly thin out the cream of celery soup)
  • 1cup crushed corn flakes(or more to taste)
  • 2tbs Parmesan cheese
  1. Preheat oven to 350 degrees.
  2. Blanch broccoli in boiling water for 1 ½ minutes, immediately transfer to ice bath and set aside.
  3. Crushed corn flakes and set aside
  4. In a bowl combine cream of celery soup, chicken stock, and salt & pepper to taste.
  5. Butter a glass baking dish, add blanched broccoli and top with cream sauce and crushed corn flakes.
  6. Bake for 15 minutes, and then broil until golden brown about 2 minutes. Top with parmesan cheese and serve immediately.
