Pickled Avocado Toast
A unique spin on a traditional favorite, this pickled avocado toast recipe is topped with a fresh avocado mash, pickled avocado slices, a perfectly poached egg with chopped tomato and onions.

Ingredients
  • 2slices backaldrin golden age boule(use any bread you like sliced thick)
  • 1 fresh avocado, ripe and mashed
  • As much of the pickled avocado as desired(we used 4-5 slices per piece of toast)
  • 1tsp distilled white vinegar(for egg poaching)
  • 2large eggs
  • Half of a medium tomato, diced(optional)
  • Half of a small onion, diced(optional)
  • chives, chopped and to taste(optional)
Instructions
  1. Toast your bread to desired doneness
  2. Add fresh avocado mash and spread on toast
  3. Add slices of pickled avocado, to taste
  4. Top with poached egg, diced tomato, diced onion, and chopped chives. (use you’re preferred egg poaching method, or ours that we detail in the post)
  5. Enjoy immediately
