Peach Salad with Pickled Onion
Feast your eyes on this colorful summer salad that is easy to make and supports a healthy lifestyle with loads of fresh ingredients.
For Salad
  • 1 cup couscous, cooked according to package
  • 1cup red quinoa, cooked according to package
  • 5oz organic salad spring mix
  • 1/4cup cherry tomatoes
  • 1 large peach, chopped
  • 1/3cup pickled red onion slices
  • edible flowers(optional)
For Dressing
  • 1/4cup pickled red onion marinade
  • 1tbs olive oil
  • 1tbs red wine vinaigrette
  • salt and pepper, to taste
  1. Cook couscous and red quinoa according to directions on packaging. Allow to completely cool before adding.
  2. Once couscous and red quinoa have cooled, combine all ingredients with the couscous and red quinoa as your base layer.
  3. Combine all ingredients for the dressing and whisk until smooth
  4. Add dressing to salad, toss to coat, and enjoy!

Note: Allow couscous and red quinoa to completely cool before adding.
