Ingredients
  • 12oz whole wheat penne pasta
  • 2cups water
  • 2cups low sodium vegetable broth
  • 1 large onion, sliced
  • 1/4tsp red pepper flakes(or to taste)
  • 1/2cup fresh basil leaves
  • 3 garlic cloves, minced
  • salt and pepper, to taste
  • 3oz low-fat cream cheese
  • 1 1/2cups pasta sauce
  • 1/4cup grated parmesan cheese(or to taste)
Instructions
  1. In a stockpot, combine pasta, water, vegetable broth, onions, red pepper flakes, basil leaves, garlic, salt and pepper.
  2. Cover, cook over medium-high heat and bring to a boil.
  3. Remove cover and continue to cook for 10 to 12 minutes, or until pasta is cooked and almost all liquid is absorbed; stirring occasionally.
  4. Remove from heat and stir in cream cheese and tomato sauce; mix until combined.
  5. Stir in grated parmesan cheese; taste for seasonings and adjust accordingly.
  6. Serve immediately.
