Mediterranean Chicken Salad
This unique recipe is filled with healthy and delicious ingredients that is easily made and perfect for those busy and warm summer weekdays.

  • 2 chicken breasts
  • 2tbs weber honey garlic rub(see note below)
  • 2tbs olive oil
  • 2cups couscous
  • 1cup bulgur wheat
  • 2 tomatoes, chopped
  • 2 cucumbers, chopped
  • 1 red onion, chopped
  • 1/4cup fresh mint, chopped
  • 1/2cup italian parsley, chopped
  • 6 Green onions, chopped
  • 1/4cup fresh basil, chopped
  • 1 head of lettuce, chopped
  • feta cheese, crumbled
  • 4tbs red wine vinaigrette(or more to taste)
  1. Prepare couscous and bulgur according to package, and chill for at least an hour
  2. Chop all fresh ingredients: tomato, cucumber, red onion, mint, parsley, green onion, basil, and lettuce
  3. Separate all fresh ingredients equally into 4 bowls or tupperware. Layer in this order: lettuce, chilled bulgur & couscous, remaining chopped ingredients, and the feta cheese.
  4. Coat chicken breasts with oil, season with salt and pepper.
  5. Rub chicken with Weber’s Honey Garlic Rub.
  6. Cook chicken breast for 4-6 minutes per side on medium-high heat, or until thoroughly cooked. Each side should start to blacken. Chop the chicken, and add to each bowl.
  7. Dress each salad bowl with a heaping tbs of red wine vinaigrette.
