Meatloaf Cupcakes
Celebrating the new year with a savory cupcake of meatloaf topped with easy creamy mashed potatoes.

Ingredients
Meatloaf:
  • 2lbs lean ground beef
  • 1/2 of a medium onion
  • 2tbs butter
  • 1cup breadcrumbs
  • 1cup milk
  • 1oz onion soup mix
  • 2tbs worcestershire sauce
  • 1egg, beaten
  • 1tsp salt
  • 1/4tsp black pepper
Sauce:
  • 1/2cup ketchup
  • 1/4cup apple cider vinegtar
  • 1/4cup brown sugar
Mashed Potatoes:
  • 4lb peeled and cutinto 1″ chunks
  • 2cups heavy cream
  • 12tbs room temperature,cut into 1/2-inch chunks
  • 2tsp salt
  • 1/2tsp ground black pepper
Instructions
For Meatloaf:
  1. Preheat oven to 350 degrees.
  2. Combine milk and breadcrumbs, set aside to soak for at least 15 minutes
  3. Small dice onion, and saute in butter for 3-4 minutes. Set aside to cool down slightly
  4. Gently crumble ground beef in a large bowl, breaking up into small pieces. Add remaining meatloaf ingredients including soaked bread crumbs and cooked onion to the bowl and gently combine. Be careful not to overwork the meat.
  5. Mix all sauce ingredients together and spread half of the sauce along the bottoms of your muffin pan.
  6. Form your meatloaf into balls, large enough to fill each slot fully leaving a dome shape at the top.
  7. Liberally paint remaining sauce over each meatloaf cupcake.
  8. Place in oven to bake for 30-35 minutes or until internal temperature reaches 165 degrees.
  9. Let rest for five minutes before piping on top of each meatloaf cupcake. See mashed potato recipe below.
For Mashed Potatoes:
  1. Rinse cut and peeled potatoes under cold water until water runs clear.
  2. Add potatoes to large pot of cold salted water, water should cover potatoes by 1″, and bring to a boil. Boil for 15 minutes or until potatoes are cooked and tender.
  3. Drain potatoes from water and rinse in colander under warm water.
  4. Run potatoes through a ricer or food mill and add butter, cream, salt and pepper. Gently fold with a spatula until fully incorporated and taste for salt.
  5. Serve on the side or on top of your meatloaf cupcakes.
Recipe Notes

To make this recipe inĀ loaf form:

  1. Spread half of the sauce along the bottom and sides of a loaf pan.
  2. Add meatloaf to a loaf pan and press firmly into a loaf shape.
  3. Liberally paint remaining sauce over the loaf.
  4. Place meatloaf in the oven and bake for 1 hour 10 minutes, or until the internal temperature reads 165 degrees.
  5. Let rest for five minutes and serve.
