Mason Jar Broccoli Salad with Honey Yogurt Dressing

  • 1cup broccoli florets
  • 1cup halved cherry tomatoes
  • 1/2cup sliced carrots
  • 1/2cup diced English cucumber
  • 1/2cup edamame or protein of choice
  • 1/4cup pine nuts
Honey Yogurt Dressing
  • 1tablespoon extra virgin olive oil
  • 2tablespoons apple cider vinegar
  • 1/2tablespoon honey
  • 1/4cup plain Greek yogurt
  • 1/2teaspoon salt
  • 1/4teaspoon pepper
  1. Bring a pot of salted water to a boil and add broccoli florets. Cook 3-4 minutes.
  2. Drain, rinse under cold water and set aside.
  3. Whisk together dressing ingredients and pour evenly into the bottom of each mason jar.
  4. Add cooled broccoli onto dressing in jar.
  5. Top broccoli with carrots then cucumbers.
  6. Next add tomatoes, edamame and pine nuts.
  7. Cover and keep refrigerated until ready to serve.
  8. Shake vigorously to mix dressing and pour onto a plate.
  9. Toss with a fork if needed.
  10. Last up to 5 days.
