Maple Bacon Cornbread Muffins

  • 1package jiffy corn bread muffin mix
  • 1/3cup milk
  • 1 egg
  • 1/4cup bacon crushed up( you could also use bacon bits)
  • 2tablespoons maple syrup
  • 1/4cup maple syrup
  • 2strips bacon
  1. Preheat oven to 400 degrees and grease the muffin pan or use paper liners
  2. Cook bacon until crisp, set aside to cool. When cooled set one or two strips of bacon and cut into larger squares. Put the rest of the bacon into a ziplock bag and crush with a rolling pit until crumbly . Skip this step if you are using bacon bits in the cornbread batter.
  3. Make Jiffy cornbread muffin mix according to the instructions on the box. Let the batter rest for 3 or 4 minutes.
  4. Add 1/4 cup crushed bacon or bacon bits and 2 tablespoons of maple syrup to the cornbread batter and mix.
  5. FILL muffin cups 2/3 full.
  6. BAKE 15 – 20 minutes or until golden brown.
  7. Let cool for 15 minutes and top with bacon and maple syrup.

Notes: Be sure to grease your paper cups as well as the cornbread mixture seems to always still to the paper lining.  We also used pre-made bacon bites, but feel free to make your own.
