Fillet of Black Cod Almondine
Hosting a dinner party anytime soon? Keep this Fillet of Black Cod Almondine topped with a White Sauce in mind for a fancy yet easy to make meal to feed the masses.
For Fish Fillet:
  • skinned fillet of black cod,about 1/3 lb per servings
  • 4tbs butter
  • 1cup milk
  • flour to lightly coat fish fillets
  • 3/4cup sliced almonds
  • fresh lemon juice
  • parsley
For Quick White Sauce:
  • 2tbs butter
  • 2tbs flour
  • 1cup milk
  • 2tsp lemon juice
  • 1/4tsp garlic powder
  • 1/2tsp salt
  • 1/2tsp fresh ground nutmeg
  • top with chopped parsley
For Fish Fillet:
  1. Melt 1-2 tbs of butter, enough to cover bottom of pan.
  2. Dip fish fillets in milk, then lightly coat with flour shaking off any extra.
  3. Saute in pan for 2-3 per side, turn once. Set aside in a warm place.
  4. Melt additional butter, and lightly brown sliced almonds, roughly 1-2 minutes.
  5. Top fish with sauteed almonds, fresh lemon, and parsley.
  6. Enjoy immediately.
For Quick White Sauce:
  1. Make rue by adding butter, and slowly adding flour as the they combine and create a smooth texture. Than slowly add the milk until fully combined.
  2. Add lemon juice, garlic powder, salt, and ground nutmeg.
  3. Top with chopped parsley.
