Egg in a Bacon Ring
This incredible Eggs in a Bacon Ring takes your traditional eggs, bacon, and toast breakfast and turns into a bite sized cup of goodness.

Ingredients
  • 12 bacon strips
  • 12 large eggs
  • 2tbs sriracha aioli
  • 1/4cup mayonnaise
  • butter for greasing pan
  • salt and pepper, to taste
  • bread cut into rounds, and toasted
Instructions
  1. Preheat oven to 325 degrees.
  2. Saute or broil the bacon lightly.
  3. Grease the bottom of the muffin pan, and line the sides with the bacon.
  4. Combine sriracha aioli and mayo, and mix thoroughly.
  5. Spread a very thin layer of the sriracha mixture at the bottom of the muffin pan.
  6. Drop onto it, 1 egg for each slot.
  7. Add salt and pepper to taste.
  8. Bake for 20-25 or until egg is just cooked.
