Chicken Salad Lettuce Cups
In continuing to plan our super bowl Sunday menu, we’ve added these delicious Chicken Salad Lettuce Cups that are a new favorite addition.

For Chicken Salad
  • 2cups cooked chicken, diced or shredded
  • 1cup celery, small diced
  • 1cup mayonnaise
  • 1tbs chia seed
  • 1tbs hemp heart
  • salt and paprika to taste
  • serve in lettuce cups
  • french dressing
For French Dressing
  • 1/2tsp salt
  • 1/8tsp pepper
  • 1/4cup vinegar
  • 1/4tsp mustard
  • 1/4tsp lemon juice
  1. Combine diced or shred cooked chicken (we used leftover rotisserie), and diced celery in a bowl, and set aside in refrigerator.
  2. Make french dressing by adding all ingredients in a small bowl, and mix until fully combined.
  3. Add to bowl of chicken and celery, french dressing, mayonnaise, chia seed, hemp heart, salt, and paprika.
  4. Mix well, and spoon into lettuce wraps.
  5. Serve immediately, and enjoy!
