Cheesy Mushroom Toast
This Cheesy Mushroom Toast is loaded with sliced mushrooms, gruyere cheese, grated onion, and eggs on delicious crispy toast.
  • 1tbs butterplus more to spread on toast
  • 1/2cup finely sliced mushrooms
  • 1tsp grated onion
  • 2 egg yolks
  • 2 egg whites
  • 2cups shredded gruyere cheese
  • 3/4tsp salt
  • 1/4tsp pepper
  • 6slices of your favorite bread
  1. In a saucepan, melt 1 tbs of butter, and saute mushrooms and onion until just tender, about 3-5 minutes.
  2. To the saucepan add egg yolks, cheese, salt & pepper, and heat and stir until fully combined.
  3. Beat in egg whites in until stiff, and set aside.
  4. Spread butter on toast, and bake on a cookie sheet until just crispy.
  5. On the untoasted side (the side that was facing down on the cookie sheet), add mushroom cheese mixture and continue to bake for 10 minutes or until cheese mixtures firms up and gets slightly puffy.
