Banana Bread Muffins
Banana Bread is just one of those recipes that when you find a good one, it’s your go to easy baked good that never fails.

For Batter:
  • 1 3/4cups sifted all-purpose flour
  • 2 1/4tsp baking powder
  • 1/2tsp salt
  • 1/3cup butter
  • 2/3cup coconut sugar
  • 3 ripe bananas
  • 2 eggs, beaten
  • 3/4cup crushed walnuts
  • 1/2tsp cinnamon
  • 3/4 tsp grated lemon rind
For Crumble:
  • 2tbs crushed walnuts
  • a pinch of salt
  • 1/4tsp cinnamon
  • 3tbs coconut sugar
  • 3tbs flour
  • 3tbs butter, cold
For Batter:
  1. Preheat oven to 350 degrees.
  2. Sift together flour, baking powder, salt, cinnamon in a large bowl.
  3. In a separate medium sized bowl combine butter, sugar, and lemon rind.
  4. In another small bowl beat 2 eggs together
  5. In another small bowl, mash your ripe bananas
  6. Add beaten egg, and banana pulp to butter sugar mixture, and combine.
  7. In a food processor, add ¾ cup walnuts and create your nut meal. (set aside 2 tbs for crumble topping)
  8. In the dry ingredients, create a well (which is a hole in the center), and add the sugar, egg, and banana pulp mixture into the well of the dry ingredients. Then add ½ cup of the nut meal (you will have extra nut meal) and gently fold together all ingredients.
  9. Pour batter into muffins tins, and set aside.
For Crumble:
  1. Add all ingredients in a bowl (make sure butter is cold) and mix with hands until it forms a play dough type consistency.
  2. Evenly top each muffin with your crumble, and bake in oven for 30 minutes.
