What a week it’s been so far. You know, the ones that seems never ending. I’m pretty sure both the hubby and I are coming down with colds, or it’s just allergies. Kind of hard to tell the difference sometimes. And Holy crazy, it’s been none stop raining…in Los Angeles. Yes you heard me right, this something we don’t experience often and is much needed. But as we a day into spring, we don’t want soup or tea which is unusual with this type of weather, but any and all things light and flavorful. This Quick Italian Salad is nothing short of flavorful.
Do you find when your nose is all stuffed up that it totally messes with your tastebuds? Cause that’s where I am at this week big time. And while I should be eating nothing but hot soup, all I want is to be able to taste something.
So naturally I want all the delicious salami, cheese, tomatoes, and cucumbers soaked in my favorite Italian dressing. I can’t forget to mention the light and fluffy romaine lettuce, but it’s these simple ingredients that make up this healthy and light salad recipe.
A couple weeks ago we shared this Easy 10-minute Greek Salad, that is similar to this Italian Salad in the sense that both take only 10 minutes to make and have nothing but the best ingredients to encourage healthy eating. And if you liked that recipe, your most definitely going to enjoy this one as well.

- 1 head of romaine lettuce
- 1/2 cup sliced tomatoes
- 1 cup diced salami
- 3/4 cup diced provolone cheese
- 1 cucumber, peeled and diced
- Girard's Italian dressing
Ingredients

- Chop and wash head of romaine lettuce.
- Slice tomatoes, small dice salami, small dice provolone cheese, peel and dice cucumber, and toss in Girard's Italian dressing. Enjoy immediately after tossing salad or it will get soggy.
