So I’m gonna start this post off with a confession. I am officially obsessed with pickling anything I can get my hands on. These pickled avocados we’re our first attempt, and we are very happy with how they turned out. There are a few things we would have done differently, but we’ll get to that in a minute.
Over the next few weeks we will be sharing a series of pickled recipes followed up by recipes using those foods we pickled. My genius partner Sammy thought this would be a good idea, and she was absolutely right. The follow up recipe to these pickled avocados is a decadent avocado toast recipe topped with sliced pickled avocado, a fresh avocado mash, chopped tomatoes and onions, and finally the most perfect poached egg (which may sound daunting to some, but trust us when we say we’ve got you covered on that front). Stay tuned for this delicious and unique recipe coming to the blog on Wednesday.
Now, I’d like to mention what we would have done differently to perfect this pickling process. We let these avocado slices pickle for a few days too long. For some of the other items we pickled, this didn’t matter so much. But these avocado slices only need 3 hours or 3 days at most. For my personal tastes, I would also scale back the amount of crushed red pepper flakes (noted in the recipe below). However, if you like things spicy, this is a great recipe to follow for more than just pickling avocados.
Friday we have a delicious cocktail recipe unrelated to pickling, but next week we will be discussing pickled red onion, and a delicious salad to go along with it.
