As promised from last week’s post, here is our parmesan roasted asparagus recipe we pared with those tasty chicken parcels. These two went so well together, we totally recommend trying out the combo. This recipe made it onto our date night at home list permanently. It’s a great side dish to any main meat as a entree.

All you need for this recipe is fresh asparagus, olive oil, bread crumbs, parmesan cheese and some spice. Combine all your ingredients into a large zip lock bag and shake em up so that the asparagus is full coated. Spread in an even layer on a baking sheet and bake for 7-10 minutes. We like our asparagus to have a slight crunch.

- 1 1/2 lb fresh asparagus, trimmed
- 2 tbs olive oil
- 1/2 cup bread crumbs
- 3/4 cups shredded parmesan cheese
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper

- Preheat oven to 425 degrees F. Lightly grease a baking sheet with non-stick spray and set aside.
- Combine asparagus and olive oil in a large zip close bag and shake to coat. Add the breadcrumbs, parmesan cheese, garlic powder, salt and pepper to the bag and shake to coat.
- Spread in an even layer on the baking sheet and bake for 7 to 10 minutes until the cheese is melted and the asparagus is still slightly crisp-tender.
