TGIF everyone! I am especially excited for the weekend festivities, mainly because it’s my Birthday tomorrow! I feel like i’m 28 going on 18. I woke up today and had that moment where you realize your 20’s are almost over, but really it just feels like a dream because you don’t actually feel like you’re almost 30. Very confusing, not sure if that made sense, but I age another year tomorrow and there is nothing I can do to stop it. Speaking of getting older, I am not 18 anymore and I can’t eat anything and everything I crave. That’s where our recipe for today comes into play. Overnight Swiss Oatmeal is my new go to breakfast food. It’s delicious, and thank god it’s healthy!
There is nothing worse than craving something you can’t have, luckily you don’t have to worry about it with this overnight oatmeal. I crave it all the time now, and I never have to feel guilty for enjoying a big bowl of this goodness.
It’s an easy before bed prep of soaking your rolled oats in boiling water , and allowing it to sit in the refrigerator overnight (we used a mason jar). The fun part comes the next day when you get to customize your toppings. There are endless possibilities. I customized my bowl with grated apple, raw honey, a splash of milk, and honey roasted sliced almonds. So much yum you guys. And the best part is it’s naturally sweetened from the honey. I am embarrassed to say that I used to add at least 2 tsp of sugar to my oatmeal, boy am I glad nipped that bad habit in the butt. There is also a lot of natural sugars that come from the addition of grated apple, so there is literally no need for any added sugar.
That coming from a person with a huge sweet tooth, trust me when I say less is more. And with all the hearty meals I’ve been eating lately, starting the day out with an easy, and light, and clean breakfast is exactly what I need right now. I know some of you probably feel the same way. It’s satisfying enough, but won’t make you feel like you need throw a pair of stretchy pants on afterwards. Save those stretchy pants for Thanksgiving. - 1 cup rolled oats
- 1 cup boiling water
- 1 tsp salt
- splash of milk
- 2 tbs honey
- 1/3 cup sliced almonds we used honey roasted sliced almonds
- 1 tbs grated apple, or more to taste
Ingredients

- In a mason jar or airtight container, combine oats, salt, and boiling water. Allow to come to room temperature. Cover and let sit in the refrigerator overnight.
- Before serving, add splash of milk, honey, grated apple, sliced almonds. Stir to combine, and enjoy!
