As most of us who live life on the go, an easy to make and healthy meal is a must when trying to balance a busy schedule and a healthy lifestyle. We can’t help but wonder, does this roller coaster ever end? We’ve come to the conclusion that it’s only going to get faster with more drops, flips, and turns. Our job is to hang on tight for the wild ride. Don’t let meal time add to your stress, and most importantly, don’t settle for takeout and fast food for a quick meal.
The best things you can do is plan your meals, and choose recipes like this one sheet pan shrimp, potatoes, and broccoli. All steps are made simple with few ingredients to prep, manageable cook time, and an easy clean up. Does that sounds good or what?! Not only does it sound good, it tastes good too. This couldn’t be a more fitting recipe for my crazy lifestyle, and most likely will be sharing a lot of these types of meals in the near future.
But I have to admit, that’s not the only reason this shrimp dinner is up on the blog today. My dirty secret is I have a freezer stuffed with bag after bag after bag of shrimp. I’ve even successfully pawned a few bags off to friends and family, but that still left me with three HUGE bags! I see lots of shrimp dinners in my near future and I’m totally ok with that.
For this recipe, I used 18 large shrimp, but that’s what I had in my freezer. You can use smaller sized shrimp, but don’t forget to adjust you cook time.
