There is nothing better than being able to throw all your ingredients into one pot, and watching the magic happen. It feels like a god send when you can find a recipe that’s truly delicious with little effort. And that’s exactly what you get with this meal. No surprises, honest! Loaded with all my favorites such as penne pasta, tomato sauce, basil, onion, garlic, red pepper flakes, and cream cheese; it’s one of those fail proof meals you can always count on. Are you drooling yet, no judgements here, I definitely did.
It’s been one of those months where both Sammy and I have been struggling to get ahead of schedule. I hope I am not spilling the beans too early, but she and her boyfriend just bought a condo! Congrats you guys! It’s all very exciting until the paperwork starts rolling in the boxes start rolling out. I am sure all of you can relate to what she is going through, maybe not the buying process, but definitely the moving process. It’s not easy to pack up a place you’ve lived at for 5 years. It’s amazing what you end up accumulating! I keep getting phone calls from her saying “I donated 13 trash bags of stuff today!” And i’m over here like a typical hoarder amazed at the possibility of giving away that much! Mr. Duff and I are renters ourselves, and found out we have to move come this fall. I think I am going to have to convince Sammy to come down and help me lighten my load. Haha just kidding, but not really. I know she is reading this and agreeing I’ll need all the help I can get! Anyways, as you can see things can get hectic at the drop of a hat, which is why this one pot meal is PERFECT for us right! If it’s not moving, it’s work, or family, etc. that can get overwhelming.

- 12 oz whole wheat penne pasta
- 2 cups water
- 2 cups low sodium vegetable broth
- 1 large onion, sliced
- 1/4 tsp red pepper flakes (or to taste)
- 1/2 cup fresh basil leaves
- 3 garlic cloves, minced
- salt and pepper, to taste
- 3 oz low-fat cream cheese
- 1 1/2 cups pasta sauce
- 1/4 cup grated parmesan cheese (or to taste)
Ingredients

- In a stockpot, combine pasta, water, vegetable broth, onions, red pepper flakes, basil leaves, garlic, salt and pepper.
- Cover, cook over medium-high heat and bring to a boil.
- Remove cover and continue to cook for 10 to 12 minutes, or until pasta is cooked and almost all liquid is absorbed; stirring occasionally.
- Remove from heat and stir in cream cheese and tomato sauce; mix until combined.
- Stir in grated parmesan cheese; taste for seasonings and adjust accordingly.
- Serve immediately.
