As I write this blog post, I literally have a batch of this one pot cheesy taco pasta simmering on the stove top right now. At the request of the hubby of course. However you’ll hear no complaints coming from me. It’s been one of those weeks where the list of things to do seems never ending; and i’ll say it every time, thank god for one pot meals!
In about 30 minutes this meal can be on your dining room table and ready to enjoy. This one is obviously a keeper as i’ve made it more than a few times at this point, and currently making it again at this very moment. Hmmmm I can smell it now!
Having made this so many times, the key is in the use of a good quality mild salsa, and penzey’s original taco seasoning. I don’t know about you, but I have tried every taco seasoning available at the market: I’ve even homemade my own. Nothing compares to penzey’s, and that’s pretty much true for most of their spices. The final and most important step is the crushed up frito corn chips for that much needed crunch. It isn’t until you add the fritos that it tastes like a true taco pasta.
I gotta say friends, this might be my favorite one pot meal we’ve shared thus far on the blog. I realize that is a big statement to make because we’ve shared quite of few, but it’s totally possible most of you will feel this way as well. To each there own, but make the decision for yourself. - 1 lb ground turkey
- 1/2 tsp salt
- pinch of black pepper
- 3 1/2 tbs taco seasoning (we used Penzey’s original taco seasoning)
- 2 cups water
- 1 cup jarred mild salsa
- 8 oz uncooked rotini pasta
- 1 1/2 cups shredded mexican style cheese
- chopped tomatoes
- Avocado
- crushed frito corn chips
- chopped green onion
Ingredients
Optional Toppings:

- Preheat a large deep skillet over medium heat.
- Add ground turkey and season with salt and pepper.
- Cook, stirring occasionally until cooked thoroughly.
- Drain grease.
- Stir taco seasoning into ground beef then stir in water, salsa and pasta noodles.
- Bring mixture to a boil.
- Stir, cover and reduce heat to a simmer.
- Cook for about 15 minutes until pasta is tender. Top with any of the optional toppings listed above, and enjoy!
