We can’t help but include one last fall flavored recipe in our blog post line up, but trust us this one is worth it. It’s the end of the week, and we don’t know about you, but exhaustion has gotten the better of us. And as much as we love cooking, ordering in sounds fabulous right now. However, when money is tight, and you are trying to stick to a diet, that isn’t really an option. If this is you, then you’re in the right place.

This is probably stating the obvious here, but one pan meals are the best for many reasons. There is little clean up, and lack of flavor is never an issue. Did we mention minimal ingredients means more money in your pocket, now that never hurt anyone.

Including salt, pepper and oil which are kitchen staples, there are a total of 10 ingredients in this recipe. Not too bad right? And the results are amazing, the sweet seasoning on the savory pork loin makes for a wonderfully juicy and delicious meal.

It’s everything you could possibly want in an easy to make 30 minute meal. We highly recommend cooking this in the cast iron as it’s high heat application properly cooks the exterior of the pork seering in as much flavor as possible. And keep a close eye on the pork as it cooks, it’s easy to accidentally overcook. Happy Cooking everyone!

- 1: 1.5-2.5 LB pork tenderloin
- salt and pepper, to taste
- 3 tbs extra virgin olive oil
- 1/2 cup brown sugar
- 3 tbs mustard (we used Daddy Cook's brand tequila honey lime mustard)
- 1 tbs minced garlic
- 2 tbs apple juice
- 2 medium apples, sliced into wedges

- Season pork with salt and pepper on all sides. Drizzle oil into a large skillet and bring to medium heat on the stove.
- Stir together brown sugar, mustard, garlic, and apple juice. Rub mixture all over pork using your fingertips.
- Cook pork in preheated and oiled pan, turning every 2-3 minutes to ensure even cooking. After about 10 minutes, add apples and cook until tender and pork is white through the middle (there shouldn't be any pink left).
- Serve immediately and garnish with fresh parsley or thyme. (optional)
