As we reflect on yesterday’s celebration for Mother’s Day, we’d like to share our last recipe created by Sammy’s mom, and you don’t want to miss this one. Nancy’s Chicken Stew is packed full of deliciousness including carrots, onion, chicken, egg noodles, and many more of the ingredients that we love. As Sammy and I were working in the kitchen prepping this meal to photograph, I kept catching her sneaking little bites (which is odd because I am actually known for being the grazer) and the expression on her face was priceless. At one point I heard her mumble under her breath “now this feels like childhood right here.” Of course I busted up laughing, but for her it was truly a moment of remembrance and what it felt like to be back in Kansas with her mom, dad, and brother.
We want to give you all the backstory on how Nancy’s Chicken Stew become a Miller Family favorite. It all began when Sammy’s mom Lisa was pregnant with her first child. Lisa was living in California at the time, and didn’t have much family support around her. In search of a group of women that she could relate too, she stumbled upon La Leche League . La Leche League is a Mother to Mother support group that is full of information, education, and their goal is to promote a healthy family lifestyle. Here she found a great group of women who educated her on the importance of breastfeeding, not just for the baby, for herself as well.
This group is a big believer in encouraging new mothers to bond with their babies through breastfeeding. And once the breastfeeding stage is over, and ideal they encouraged was the importance of introducing real whole foods that can be carried through to the entire family. As a result, Lisa believes this encouragement is a big reason why Sammy and her brother crave healthy foods to this day. Her favorite source for wholesome family meals comes from the cookbook “Feeding the Whole Family Whole Foods Recipes for Babies, Young Children, and their Parents.” A book that became her cooking bible while her children were young. This quickly grew to become Sammy’s favorite recipe that she requested on the regular, and because of it’s delicious flavor, it became comfort food for the whole family. Sammy felt there was no other recipe that reminded her of mom more than Nancy’s Chicken Stew. It might be a day late, but we want to wish Lisa a Happy Mother’s Day, and hope that this post brings back awesome memories as I know it did for Sammy.
