Summer is almost over so we are beating the heat with our mint chocolate chip popsicles. If you love the creamy texture of frozen yogurt and the flavor combo of mint and chocolate you should pin this recipe and make it before summer is over.
This recipe is super easy to make just be sure you make them way in advanced they need at least 5 hours to fully freeze. First we whisked the milk, greek yogurt, vanilla, peppermint extract, 4 drops of green food coloring and blue agave nectar. The subtle natural sweetness of the blue agave really balances out the peppermint, we suggest this combo over any other sweetener. Next we filled our popsicle molds and sprinkled the top with mini chocolate chips, put the top of the mold on and then the popsicle sticks. Be careful to not overfill the popsicle mold or it will be super hard to take the top off. If this happens let the pops sit out at room temp for 10 minutes.
Last we dipped the popsicles in magic shell and put them back in the freezer for 5 minutes and served them immediately. We used wax paper to wrap each pop then put them in individual zip lock bags. - 1 cup Vanilla Greek Yogurt sub Low-Fat, or No-Fat
- 1 1/2 cups milk
- 1 tsp vanilla extract
- 3/4 tsp Mint or Peppermint Extract
- 2 tbs Blue Agave Nectar
- 1/2 cup mini chocolate chips
- 1-2 drops Green Food Coloring, optional
- 1/4 cup Chocolate Magic Shell
- 6 Popsicle sticks

- In a mixing bowl, whisk together the milk, greek yogurt, vanilla, peppermint extract, and blue agave nectar .
- Add in green coloring to your desired shade of green (we added roughly 4 drops of food coloring). Whisk it into the mixture until it's evenly mixed in. Pour the mixture into a popsicle mold. Sprinkle the tops of the pops with the mini chocolate chips, some will settle through while the pops freeze. If you would like additional chips mixed in, mix in a few additional mini chocolate chips using the popsicle sticks. Place sticks in the pops to freeze.
- Place the pops in the freezer for 5 hours or longer to freeze solid. When ready to serve, run the base of the molds under hot water briefly and while grasping the sticks, wiggle the pops out of the mold.
- Dip or drizzle the pops in to the Chocolate Magic Shell. Serve immediately or put them back in the freezer. Using wax paper wrap each pop then put them individually into sandwich bags.
