Hey guys, hope you all had a great weekend. I spent most of it working on blog stuff, luckily I love it, right? I made the best s’mores bar recipe ever, and I cannot wait to share it with you all. I also experimented with finding a recipe for homemade chicken broth, something with a little more flavor and cheaper than buying it at the market. Stay tuned for that recipe, it’s going to be epic.
Now, let’s chat about what’s on the agenda today. I am a huge mexican food fan. It’s bad you guys, I constantly crave carnitas tacos, and steak burritos. It’s so bad, my husband’s pet name for me is the little burrito. For his sake, Sammy and I had to come up with something Mexican that is not tacos or burritos. And something a little healthier and that could satisfy my craving. That’s where these delicious mexican tostada bowls come in. We bought a mold to make fresh tostada shells, which we highly recommend. Fresh is always better. We then decided to replace ground meat with ground turkey, and added Penzy’s Original Taco Seasoning . Do yourself a favor, and buy this taco seasoning, it’s truly the best out there. However, any taco seasoning will work. Next we added black beans, which we just heated up in on the stove top. Shredded lettuce came next, then chopped tomatoes, guacamole, and a drizzle of nacho cheese sauce to finish it off.
It’s the not the fanciest meal out there, but it’s an easy to make healthy dish perfect for a Monday night. And if you were wondering, it completely satisfies my mexican food craving, WINNER! Feel free to customize these however you choose. I think next time I might add a little corn on top, just a thought though.
