On the blog today is a delicious original recipe created by our very talented recipe creator, Sammy Miller. Both Sammy and I try to add our own flair to all the recipes we blog about, but it’s not often that we are able to share something completely made up from scratch. So, thanks to sammy, we are bringing you a Mediterranean Chicken Salad that you will only find on the Blooming Bites blog.
Loaded with healthy ingredient and a unique flavor, if there is any meal to add to your weekly meal plan it’s this one. It’s satisfying enough that you won’t go hungry, but also light enough that you could eat a whole bowl and feel comfortable getting into a bathing suit soon after. Real talk though, I wrote that last sentence and thought to myself “hell yeah!” I got be honest and say there are not many foods I am willing to eat 20 minutes before baring my stomach to the world. But not eating isn’t an option either. So what options are left? Portion control is very important, however some people relate this to barely eating. When you don’t eat enough, your body goes into starvation mode. This is when your metabolism starts to slow down as well as other body functions in order to conserve energy. So, while you may think that it makes perfect sense that the less you eat the more fat you’ll lose, you’re actually doing more harm than good. There is no shame in wanting to look your best during these summer months, and eating more recipes like this chicken salad will help you feel like your best self.
As far as preparing this recipe, there is one tip I’d like to mention. Allow your couscous and bulgur to cool down completely before adding to your salad. Otherwise, follow the directions and you will see it’s a very easy to make recipe that will leave you perfectly satisfied.
