Maple bacon cornbread muffins is our go to quick side dish for the holiday season, and everyone in our family love’s them. What we love is how quick and easy this recipes is. We used Jiffy corn muffin mix to speed things up but you could definitely replace that with a homemade cornbread muffin recipe, we are think of doing that this year and will update this recipe when we do.
All you need for this side is milk, egg, bacon, jiffy cornbread muffin mix and maple syrup. We almost always have these staple ingredients in our houses. Also how can you not love the combo of classic cornbread, bacon and maple syrup? We are obsessed with these little muffins.
Cornbread is such a great comfort food, both of our mom’s would make it on a regular basis. Sammy’s mom would make skillet cornbread served with butter and honey. Tessa’s mom would make a sweet cornbread cake that didn’t need anything with it. We love our mom’s recipes but our cornbread muffins win the taste test, the bacon just puts it into a whole new category of yumm.
