If you didn’t notice yet we are super excited for fall and everything pumpkin, apple and cinnamon flavored yum. This homemade stove-top apple pie filling should be on your thanksgiving Pinterest board today, it really is that good.
This recipe is going to be useful all season long. We made a small batch this time for some mini apple pies (look out for that post on Monday) and we are planning on making a much larger batch for lots of fall inspired baked goods.
To make this stove-top apple pie filling first we zested a lemon, then squeezed its juice in a bowl. Next we peeled, cored and chopped up fresh apples, putting the cut up apple in the bowl with the lemon juice, this prevents the apples from browning. Then add all the seasoning, maple syrup, lemon zest, water and coconut sugar mix it all together. Cook over the stove-top on medium high heat until the apples are fork tender. Using maple syrup is the hero of this recipe, it caramelizes the apple and adds a wonderful sweetness.
We use this apple pie filling recipe in so many different ways like putting it over some oatmeal, as a waffle or pancake topper, or bake with it like we did with our Apple Fritter Bread Houses and Caramel Apple Cream Cheese Crescent Ring.
