We’ve almost made it through the week my friends, and we got this! At least that’s what I keep telling myself. Just a few more days, and it’s the weekend woo hoo! I am really excited to share this Healthy One Pan Chicken and Vegetables dish. It’s my new favorite go to dinner for weeknights. It makes dinner feel less like a burden at the end of a crazy day. Because let’s be honest, after a full day the last thing you want to do is cook and clean.
This of course is the reason why one pan meals are the most perfect of all recipes. Bonus when they taste like they took you hours of preparation, am I right? You’ll fool everyone with this One Pan Chicken and Vegetables recipe that takes….wait for it….20 minutes total to make! That’s prep and cook time, no joke.
It’s as simple as cutting up your chicken and veggies, tossing them in olive oil and spices, and baking for 15 minutes. I cut my chicken into about 2 inch chunks so they don’t overcook with the amount of time the veggies need to bake. Of course make sure your chicken is fully cooked before eating. What works in my oven, might not in yours, just something to keep in mind.
You can also alternate your choice of vegetables, so whatever you have in your refrigerator will most likely work as an additional or substitute ingredient. This time around, I used a combination of red/yellow bell pepper, onion, and broccoli. But have i’ve made it with an additional ½ cup of cherry tomatoes, and a cup of zucchini. I’ve got brussel sprouts in my refrigerator right now, and think it would be a great substitute for the broccoli or zucchini.
Honestly you can’t go wrong either way, an can turn the same recipe into something new a different. I love that more than you know. If your ever going to listen to my advice, add this to your weekly meal plan. It’s healthy, tasty, cost efficient, all with minimal clean up. We call that a win win. - 2 medium chicken breasts chopped (2 inch chunks)
- 1 cup bell pepper, chopped (any colors you like)
- 1/2 onion, chopped
- 1 zucchini, chopped (optional)
- 1 cup broccoli florets
- 1/2 cup cherry tomatoes (optional)
- 2 tbs olive oil
- 1 tsp minced garlic
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 tsp italian seasoning
- 1/4 tsp paprika
Ingredients

- Preheat oven to 500 degree F.
- Chop all the veggies into large pieces. In another cutting board chop the chicken into cubes.
- Place the chicken and veggies in a medium roasting dish (if omitting some vegetables, add extra of another) or sheet pan. Add the olive oil, salt and pepper, italian seasoning, garlic, and paprika. Toss to combine.
- Bake for 15 minutes or until the veggies are charred and chicken is cooked. Enjoy with rice, pasta, or a salad.
