Happy Wednesday everyone. We are getting so close to the weekend, and it’s almost St. Patrick’s Day! Our last post featuring the beef and guinness hand pies go hand in hand with this guinness roasted chicken, it’s a toss up which one is tastier. Who would’ve thought cooking with guinness would result in some seriously juicy and flavorful meals.
Not that we don’t love red meat, but most of the recipes we share on our blog feature mostly chicken, turkey, and pork and we’ll tell you why. Not only are they healthier for you, our food stylist and recipe developer, Sammy, is actually allergic to red meat. It’s an incredibly rare allergy that she has been living with since childhood. When I hear her talk about it, it’s clear how difficult it was and is to cope to with. Being such a rare allergy, she even struggled with people believing it was true; when all it takes is cooking on a surface contaminated with red meat and game over.

On the flip side, I am incapable of living without red meat in my diet. I know there are a lot of you out there, like me, that eat red meat on the regular; and we could all use a little Sammy in our life. Moderation is key, and it never hurts to change up a recipe every now and then.

Today we bring to you this roasted chicken that needs no substitution. It’s easy to make, and enjoyed by all. Since It’s St. Patrick’s Day on Friday, it doesn’t get more festive than cooking with an Irish stout. We hope you all enjoy, and happy cooking!

- 1 whole chicken
- 1 16oz can guinness ½ cup used for sauce
- 2 tbs daddy cook’s spicy cider bourbon glaze
- 1/2 cup jack daniel’s original recipe BBQ sauce
- salt and pepper, to taste
Ingredients

- Preheat oven to 350 degrees
- Thoroughly clean your chicken. Pat dry, then season with salt and pepper
- Pour out half of your guinness beer into a glass and reserve for sauce
- Place whole seasoned chicken on half filled beer can and place on parchment lined baking sheet.
- Place in oven on the lowest rack possible, and cook for 1 hour.
- While your chicken cooks, in a medium saucepan, combine ½ cup guinness, 2 tbs bourbon sauce, ½ cup BBQ sauce, and 2 tbs soy sauce. Cook until it slightly thickens then remove from heat. Be patient, may take time to thicken.
- When done remove chicken from oven, pour sauce over your chicken. Any excess sauce should be brushed back on.
- Continue cooking for another 20 minutes.
