With all the healthy recipes we shared last week, we thought we should create some balance with a sweet treat. Our food stylist, Sammy Miller, created this amazing pudding trifle that is to die for. Made better by the addition of girl scout cookie which everyone has their favorite. Obviously our favorite is the Samoa’s.
Below we’ve included a delicious recipe for vanilla pudding, but feel free to use your favorite pre-made vanilla pudding to make this easier. Not included in the instructions below is how we got that awesome cookie crumble around the rim of the glass. Perfect for serving at your next party or family gathering, everyone will be so impressed.
All you have to do its crush 2-4 cookies in a zip lock bag (best if no one is watching when you do this, because it can get violent ha!), add pudding to the rim of your glass, and place your cookie crumble in a bowl and gently dip all sides of your glass in the crumble. It can’t hurt to add a bit of style to your food creations right?! Happy cooking!

- 2 cups milk
- 2 tbs Cornstarch
- 1/4 tsp salt
- 1 egg
- 1 tbs butter
- 1 1/4 tsp vanilla
- box of samoa girl scout cookies
- your favorite almond coconut granola
- whipped cream optional
Ingredients

- In a medium-sized saucepan add the cornstarch, sugar, and salt. In a separate bowl, beat the egg until paler in colour: a good couple of minutes. Add in the milk and whisk to combine. Pour liquid into saucepan.
- Cook mixture over medium heat, whisking often, until bubbles form and mixture thickens. Remove from heat and stir in butter and vanilla. Allow to cool slightly on stove top, stirring occasionally to prevent film.
- Pour pudding through a fine sieve. Divide the pudding into individual cups, only fill halfway. Refrigerate until ready to serve.
- Crush up some samoa girl scout cookies and mix it into the granola. Add as much of the granola mix as you desire, and top with whipped cream and a samoa cookie.
