This recipe is exactly how it sounds, and that is FUN! This incredibly easy to make recipe for funfetti french toast muffins is one to keep on hand for any party. Change up the sprinkles on-top for the type of party you are making them for, we were making them for a birthday party so we put fun colorful stars. Sammy made these for a baby shower for a friend who was having a boy and put blue sprinkles on them, everyone loved them. They are a little messy to eat but well worth it.

We use Pillsbury cinnamon rolls for this recipe, using pre made cinnamon rolls makes this recipe much faster. You could use any brand of cinnamon roll you like for this recipe. We cut up each cinnamon roll into about pieces per roll. Coat them with the french toast mix, place in muffin tin and bake for around 20 min. Top with the icing from the cinnamon roll pack and themed sprinkles of your choice.

- 1/4 cup international delight sweet cream creamer
- 2 large eggs
- 1 tsp ground cinnamon
- 1 tsp vanilla extract
- 2 packages pillsbury grand cinnamon rolls
- 1/2 cup sprinkles
- sprinkles
- icing from cinnamon rolls

- Preheat oven to 375F degrees. Spray muffin pan with nonstick spray. Set aside.
- In a medium-sized bowl, whisk together creamer, eggs, cinnamon and vanilla.
- Unwrap packages of cinnamon rolls, set icing aside. Cut rolls into 8 pieces each.
- Place pieces into egg mixture, stirring to coat.
- Place 6 pieces into each muffin tin. Spoon any remaining egg mixture over the top of each muffin tin. Sprinkle the top of each muffin with sprinkles.
- Bake for about 20 minutes or until tops are golden brown.
- Pour icing into a microwavable bowl and heat for 7 seconds. Spoon over each muffin and top with more sprinkles.
