It’s hump day, and we’ve got a loaded post for you all today. With summer right around the corner, nothing sounds better than these delicious frozen yogurt bites. And we have 3 different variations for you to pick from! Blueberry almond (my personal favorite), strawberry pineapple, and strawberry banana. So much YUM you guys!
With very simple and healthy ingredients, it’s surprising how fulfilling one of these can be first thing in the morning, or to snack on half way through the day. The crumble at the bottom is the best part! It’s made with crushed almonds, coconut sugar, and coconut oil, and flax seed. Next layer is the yogurt and honey mixture that is to die for. Got too love that natural sugar flavoring from the honey! And finally, the toppings of your choice. Sounds super easy right? It’s as simple as layering each ingredient in the muffin tins and sticking them in the freezer. They need 6 hours to fully freeze, so best to prepare them the night before to enjoy the next day. And make a bunch, if kept in the freezer, they can sit for about a week.
Another reason to add this recipe to your meal plan, is kids will love them. They are sugary sweet but all natural and healthy. The whole family can enjoy these, or do what I did and hoard them for yourself!

- 1/2 cup crushed almonds
- 2 tbs flax seeds
- 2 tbs coconut sugar
- 2 tbs coconut oil
- 2 cups yogurt
- 4 tbs honey
- fresh Blueberries
- sliced almonds
- fresh pineapple, small diced
- fresh strawberries, sliced
- fresh banana, sliced
- fresh strawberries, sliced
- drizzle of chocolate sauce (optional)

- Line muffin tin.
- In a small bowl, stir together crushed almonds, coconut sugar, coconut oil, and spoon 1 tbs into each muffin cup.
- In a medium bowl, mix together yogurt and honey and add on top of crust layer.
- Top with fresh fruits variations of your choice.
- Freeze for 6 hours. Before serving, set out at room temperature for 8-10 minutes.
